Nutmeg on Everything!
Ever since I was a little girl, I’ve loved everything eggnog. So when I accidentally put nutmeg in my morning green smoothie (I meant to use cinnamon), I was absolutely giddy with excitement when it came out tasting (almost) like eggnog! This was intended to just be a plain smoothie with 3 simple ingredients to get my daily greens and nutrients and turned out to be such a treat.
All you food bloggers out there – I’m so envious of your fancy cameras, great lighting, and adorable props! Like those super cute striped straws everyone uses with their juices and smoothies! But for reals people – ain’t nobody got time to try to drink a thick smoothie with those tiny skinny straws. I prefer these boba straws for my smoothies. They’re not cute, but they’re practical. 😉
Start with your preferred base liquid. I’m lactose intolerant, so I use soy milk, but you can use almond milk, coconut milk, or whatever your preference is. To keep the calorie count low, use non-fat milk, or plain unsweetened versions soy milk, almond milk, etc.
Next, add your favorite vanilla protein. You can use any kind of protein powder you want. I’m using Vanilla Shakeology in this recipe.
Add a few shakes of nutmeg, cinnamon, a splash of vanilla extract, and a cup of ice. By the way, did y’all notice the price of vanilla skyrocketed recently? I normally get mine at Costco for $3.99, but last time I went it was an eye-bulging $26.99! I actually thought it was a mistake and someone put the wrong sign up. Dayummmmn.
Next, cram in 2 huge heaping handfuls of spinach and blend the shit out of it.. Don’t be shy. I promise you’ll hardly taste it.
If you want a creamier smoothie, you can also add 1/2 banana or 1/2 an avocado. If your bananas are frozen, skip the ice.
Eggnog Green Smothie
This delicious spinach smoothie has a hint of nutmeg to give it that eggnog flavor!
- 1 cup soy milk plain
- 1 scoop Vanilla Shakeology or protein powder of your choice
- 1/4 tsp nutmeg
- dash cinnamon
- splash pure vanilla extract
- 2 large handfuls spinach packed
- 1/2 medium banana extra ripe
- 1 cup ice
Add ingredients to a blender in the order listed, starting with the soy milk and ending with the cup of ice. Start blending on low, then slowly increase to high and blend until smooth. If you have a Vitamix, hit the low/high variable switch to whip it up (whip it good) and make it thicker. Add water/ice to your desired consistency.
Note: If you're using frozen spinach or frozen bananas, skip the ice
